Apple Brown Betty

Courtesy of Pioneer Woman

  • 3 whole Apples, Preferably Granny Smith
  • 7 slices Wheat Bread
  • ¾ cups Regular Salted Butter
  • 1-½ cup Packed Brown Sugar
  • 3 Tablespoons (to 4 Tablespoons) Water

Preparation Instructions

Peel and thinly slice 3 apples. Slice bread into a small dice, or tear into very small pieces.
Coat a small baking dish or pie plate with butter. Then add 1/3 of the brown sugar, 1/3 of the apple slices, and 1/3 of the breadcrumbs. Repeat these layers twice more, ending with breadcrumbs.
Slice butter and lay slices all over the top of the breadcrumbs. Sprinkle dish with water and a little more brown sugar, and bake in a 375-degree oven, covered in foil, until done – about 45 minutes. Remove foil in last few minutes of baking to brown the top.
Serve with ice cream, whipped cream, or Reddi Whip, if you’re feeling ornery. Enjoy!

Peach Dessert

Peach Dessert (Leslie Olsen)

1 cup sugar
2 cups water
2 tbs cornstarch

Boil until thick and add a small package of peach jello. Put in frig and set up until syrupy. Add:
4 cups fresh peaches.
Make a graham cracker crust (or use the fancy pre-made ones).
Whip 1 pint whipping cream, 1/2 c powdered sugar and 8 oz cream cheese.
put the whipped mixture on the crust, and add peach mixture on top.
**while the pre-made crust is easier, it looks really pretty if you make it in a glass dish with your own crust. You can see the layers like a fancy parfait.

2 QTS peaches (8 cups)
2 QTS Sugar (8 cups)

"Julie Jello"

"Julie Jello" (Julie Taylor)

1 large package orange jello
16 oz cottage cheese
12 oz Cool Whip
1 can (15 1/2 oz) crushed pineapple, drained
2 cans (11 oz) mandarin oranges

Sprinkle jello over cottage cheese, stir until disolved. Add cool whip, pineapple, and mandarin oranges. Mix well. Serve Chilled.

**The name comes from a previous coworker of mine. It was a running joke in her family that she would always bring this jello because it was the only thing she could make. It was also usually what she would bring when we had potlucks at work :o)

Banana Bread

Banana Bread (Food Network)

1 C white sugar
***8 tablespoons (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 tbps milk
1 tsp ground cinnamon
2 C all-purpose flour
1tsp baking powder
1 tsp baking soda
1tsp salt

1.Preheat the oven to 325. Butter a loaf pan and set aside
2. Cream the sugar and butter until light and fluffy. Add the eggs one at a time, beating well after each addition
3. In a small bowl, mash the bananas with a fork (I use pretty brown looking bananas, and mush them for a good 'ole time)
mix in the milk and cimmamon.
4. In another bowl, mix the flour, baking powder, baking soda and salt
5. Add the banana mixture to the creamed mixture and stir until well combined. Add the dry ingredients, but mix JUST until
the flour starts to disappear.
6. Pour the batter into the pan and bake 1 hr-1 hr 10min at 325. Check it with a toothpick, let it cool before you cut it, etc etc etc.

***note* I've made this recipe a LOT. It's just a standard one I found on food network one day when I needed a quick recipe but I've found that the bread is so much more moist if I use tub margarine (Country Crock) instead of stick butter or stick margarine.
