Sprouts-Soy Ginger Salmon

Soy Ginger Salmon
Makes 4 servings
Ingredients
3 T sweet soy sauce
4 T water
1/2 tsp. ground ginger
1 lb. salmon filet
1 T vegetable oil
3 or 4 cloves garlic, minced
1 bag (16 ounces) fresh baby spinach, stems removed
2 tablespoons water
Salt
1/4 teaspoon Asian sesame oil
Toasted sesame seeds, if desired

Directions
Combine soy sauce, 4 tablespoons water and ginger in baking dish. Add salmon to marinate, flip salmon to coat and let stand 15 minutes. Add vegetable oil to a skillet and heat one minute over medium heat. Add salmon, skin side down and cook 3-4 minutes. Turn salmon, cover skillet and cook 3 minutes more until cooked through.
Remove skin and transfer salmon to plate.
Add marinade to skillet; cook 1 to 2 minutes to reduce to a syrup.
While salmon is cooking, lightly coat a second skillet with cooking spray. Heat one minute over medium heat. Add spinach, garlic and 2 tablespoons water. Cover and cook 3 to 4 minutes, stirring until spinach is wilted. Salt lightly and add sesame oil. Pour soy glaze over salmon; sprinkle sesame seeds on top, if desired. Serve salmon with spinach and sticky rice.
