Homemade Noodles (D Aitken)
Crack two eggs in mixing bowl.
Add about 1 tablespoon of vegetable oil.
Add 1/4 tsp of salt.
Mix ingredients (eggs, oil & salt) with fork until yolks are broken.
Add flour gradually, stirring in between with fork until consistency of dough.
Let dough rest for 30 minutes.
Pour about 1 cup flour on to clean, flat surface.
Place dough in center of flour mound.
Roll out dough to about 1/8" thick or less.
Begin rolling one edge and sprinkle flour on folded dough.
Roll again and add more flour to fold (The flour prevents noodles from sticking together).
Repeat process until dough is completely rolled up.
Cut rolled dough lengthwise.
Cut each half of rolled dough into noodle-sized widths.
Gently sift noodles with fingers and unravel them, mixing with flour.
Add noodles to boiling soup stock that has been cooking with diced celery, carrots and onions.
(Be sure to remove chicken breasts from broth before adding noodles. Shred or dice chicken breast
meat and add to soup. Let simmer until noodles are soft. Add salt, pepper and parsley flakes to season.)
